This last week has been soooo healthy. I've been drinking a hell of a lot of water and just generally eating really well. So I thought I'd share with you my wholemeal blueberry breakfast muffins. I found a recipe but had to tweak it as I couldn't find any coconut flour, so added wholemeal flour instead and they smell delicious! The recipe is below, enjoy!
3 eggs
1 banana
1 tbsp coconut oil
1 tsp cinnamon
1 tbsp vanilla extract
1 cup blueberries
1/2 tsp bicarbonate of soda
8 tbsp wholemeal flour
1 tbsp Greek yoghurt
Yummy breakfast!
